Biggby Coffee’s fate here was in the air Monday as cranes and crews placed parts of the business’ soon-to-be modular drive-in shop on leased space at 6432 Blue Star Hwy. southwest of Spectators Restaurant.

Kim Walston, who with Brew Happy Ventures Inc. partner Tara Zdybel is expanding Biggby founder Bob Fish’s 11-state 270-franchise chain to Saugatuck Township, told The Commercial Record she hopes to have the new drive-in up and running by August.

She, Fish and Zdybel all live here.

The township this winter granted Brew Happy a special approval use for the C-1 commercial-zoned site to serve as a restaurant with drive-in/take-out facilities.

Walston, who operates Biggby’s in South Haven and Michigan City, said the local venture is one of five new modular projects the regional coffee shop chain is developing.

“The new shop will give my daughter a chance to gain management experience,” she added.

“We are excited to be even more a part of this community,” Walston said.
